  • 2 large eggs, at room temperature
  • 1/2 cup (120ml) whole milk
  • 1 teaspoon pure vanilla extract
  • Frosting of your choice (buttercream, cream cheese, or ganache)

Instructions

  1. Preheat your oven to 175°C (350°F). Line a mini muffin pan with mini cupcake liners.
  2. In a large bowl, beat the butter and sugar together until light and fluffy.
  3. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  5. Add the dry ingredients to the wet mixture in three parts, alternating with the milk, beginning and ending with dry ingredients. Mix until just combined.
  6. Spoon the batter into the prepared mini muffin pan, filling each liner about two-thirds full.
  7. Bake for 10-12 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the Mini Cupcakes cool in the pan for a few minutes before transferring them to a wire rack. Frost once completely cool.
